Let’s Get Cooking

It’s time to turn the page, take a deep breath, and welcome 2021! While we can’t know for certain what a new year will bring, we can move forward with hope. If 2020 has taught us anything, it’s to take nothing for granted and that when we have to, we can reimagine and redefine how we connect with each other.

It’s no secret that food is a great way to connect! The Funky Cow Cafe is excited to announce that in 2021, we’ll be offering custom virtual cooking classes. Our trial run in December with a Cuban Cooking Class was a great success. Here’s the recipe for the main entree:

MOFONGO CON SALMON ALA HILLO
(MASHED PLANTAINS GARLIC SALMON)

Mofongo con Salmon is a traditional Latin dish, that is easy to make, and is filled with deliciousness flavor!

Pairs well with White Sangria or a Pomegrante Mojito

1 Peel the plantains, cut them into 1 1/2-inch slices, soak them in salty water for 15 minutes, drain them and dry them before putting them on the hot skillet with oil.
2 Fry them for about 12 minutes at medium-low heat or until they turn light brown. Make sure to turn them. Do not brown them too much, so they are easy to mash. Stick a fork in them to check if they are done.
3 Remove them and mash them on a mortar. Add some mashed garlic and a little olive oil if it seems dry
4 Once you have mashed all the plantains, mold them into the shape of half sphere using your hands or a container. Serve with your grilled salmon or any type of protein you may have made to accompany your delicious mofongo.

On a personal note, 2020 was a challenge and an opportunity to re-examine what matters most. I am forever grateful for your support in the midst of a world wide pandemic and I so look forward to the day when we can break bread (a.k.a waffles) in the cafe together.
